Peach Delight Recipe

Looking for a delicious, cool dessert? Pick up some local peaches and 240SWEET Artisan Marshmallows at the Farmers' Market. If you can't make it to one, stop in Double Oak Farm at 1120 Washington Street, Columbus, Indiana for both.


3 or 4 medium fresh ripe Peaches
2 cups 240Sweet Gourmet Marshmallows cut in mini sized pieces
1/4 cup Sugar
2 Tablespoons fresh Lemon Juice
1/4 teaspoon Almond extract
2 cups Heavy Whipping Cream
Sweetened sliced fresh Peaches for garnish

Peel and pit peaches, whirl in blender or mash w/ masher. Mix peaches, Gourmet marshmallows, sugar, lemon juice and flavoring.
Cover and chill the peach/mallow mixture 2 to 3 hours, then beat w/ mixer for 3 minutes until marshmallows are partially broken up. Whip cream until stiff; fold cream into peach mixture. Pour into lovely shallow serving dish and chill for several hours or partially freeze. Serve garnished with sweetened sliced fresh peaches and sprigs of mint or fresh basil. Serves 6 to 8 persons.
