A Wedding at The Fields

Recently we were delighted to cater the picture-perfect June wedding for Chelsea and Brad.

Organized and planned by our good friend and event designer extraordinaire, Cathy Teeters, over one hundred guests attended the ceremony in Bloomington.

As friends and family gathered, they snacked on fresh fruit and artisan cheese appetizers.

Afterward, everyone enjoyed our Pasta Saute Bar. Each guest was able to choose from a variety of pastas, sauces, and toppings and have their own unique blend prepared and served piping hot by our professional catering staff.

Other delicious options included our Hoosier Dinner Station complete with Lemleys' homestyle pulled pork mini-sandwiches and a fresh salad bar piled high with veggies and warm baked rolls.

A fabulous wedding cake prepared by a local artist topped off the blessed event.

The couple chose Lemleys' Catering based on recommendations from other happy customers and the knowledge that Chef Alexa and Samantha are experts at designing custom serving stations for receptions.

Chelsea says, "We loved working with Sam and Alexa! They listened to all of our suggestions and were very flexible when it came to planning our menu. The food was delicious! I think almost everyone went back for seconds at our reception. All of our wedding guests raved about how amazing the food tasted."

Each participant may enter up to three photos, but cannot enter on behalf of someone else. Limit of one $5 website code for each person.
Photographs must depict 240sweet Artisan Marshmallows. 240sweet Artisan Marshmallows must appear in the photo.
All photos must be family-friendly. Sap's Buffeteria, Inc. reserves the right to remove photos from Facebook page.
Entries must be photos of 240sweet Artisan Marshmallows, not other brands or similar marshmallows, and must have been taken in the U.S.
The contest is open to both amateur and professional photographers of all ages.
All photos must have been taken after Jan. 1, 2010.
Photos must not be previously published and Sap's Buffeteria, Inc (owner of 240sweet Artisan Marshmallows reserves the right to publish or reproduce the photos. All photos become the property of Sap's Buffeteria, Inc. and may be used without compensation or credit.
Should people be in the photo, their names, telephone numbers and e-mail addresses must be provided by email to sam@240sweet.com so Sap's Buffeteria,Inc. can notify them in case of publication.

In 2008, an amazing program began, launched by the Indiana Office of Tourism Development, the Indiana Office of Community and Rural Affairs, the
Indiana Arts Commission and the Indiana State Department of Agriculture. This program was named Indiana Artisan.

A few days ago, I spoke with Eric Freeman, the director of this unique program. We discussed the purpose of Indiana Artisan and how it has
succeeded. Freeman described the priorities that each of the agencies involved in the project brought to the table.

Overall, the goals of Indiana Artisan are to raise awareness of locally crafted products, establish Indiana-made goods, encourage travel in Indiana,
provide rural artisans with access to entrepreneurial support and support an artisan trail and retail development.

There are programs similar to Indiana Artisan around the nation, the most famous probably being Kentucky Crafted and Kentucky Proud. The program
has been in existence for 30 years and served as a model in many ways to the Indiana program.

So, why is this food column about Indiana Artisan?

It’s because almost 50 of the juried Indiana Artisans are food producers. Their products vary from wine and spirits to baked goods and candies.

In southern Indiana, products as varied as gourmet marshmallows, barbecue sauce, old-fashioned green relish and shagbark hickory syrup can be
found. Around the state you can find pies, maple syrup, pierogis, salsas and lots of confections.

Artisans join the program through a rigorous jury process in which their products are first judged on packaging, label and shelf appeal. Then, a second
panel evaluates the taste, texture and appearance of the actual foodstuffs.

The products are evaluated for retail potential as well as how they link to the Hoosier State. An item with a specific family recipe is also a benefit.

Since the Indiana Artisan program began, 153 artisans have been identified, representing 50 Indiana counties. All but four of these artisans still remain
in the program, a few having moved or changed career plans. Anyone can apply to be an Indiana Artisan at no cost. All that is required is a well
executed product.

One of the Indiana Artisans in southern Indiana is the Sisters of St Benedict’s Simply Divine Bakery. Located in Ferdinand, this monastery bakery
produces springerle cookies, similar to those the community has been producing for more than a century. I purchased some of these delightful cookies
last year at the Holiday Market on the Saturday after Thanksgiving right here in Bloomington.

The Simply Divine Bakery now sells three different types of cookies, each having been juried through the Indiana Artisan program. In addition to the
springerle, Almerle and Hildegard cookies have been added. The Almerle is similar to a springerle, but has almond flavoring. The Hildegard is a spice
cookie that, according to the sisters, was said to slow the aging process and “encourage a cheerful countenance.” That’s one powerful cookie!

If you are looking for a unique confection for holiday gifting, you may be interested in the marshmallows from 240Sweet, a business in Columbus
owned by Alexa Lemley and Samantha Aulick. These are not your ordinary marshmallows; these yummy confections raise marshmallows to a new
height.

Lemley began selling her treats about three years ago when demand for her creative candies became overwhelming. As an Indiana Artisan, she likes
to create flavors that are native to the Midwest or have a Hoosier flair. She also makes some innovative flavors, such as Thai Chili or this month’s
special, Turkey with Sage Dressing.

The Indiana Artisan program has helped advance the business for 240Sweet, opening doors around the state for Lemley and her creative confection
business. She was chosen as Artist in Residence at the Indiana State Museum and received media coverage that exposed her business to
prospective retailers who now sell her products.

Another product found in our vicinity is Shagbark Hickory Syrup from Hickoryworks in Trafalgar. The company was started decades ago by Gordon
Jones and his wife, Sherrie Yarling, and has grown into an internationally distributed brand.

Hickoryworks syrup, made from the bark of the shagbark hickory, is sold around the world, has been featured on television (Food Finds) and was even
given to Julia Child. The company has expanded its products to include Smoked Sea Salt, Poplar Syrup and Bestcestershire Sauce, a local twist on
Worcestershire Sauce.

Local wineries including Oliver, Butler and Huber, are also Indiana Artisan members. Judy Schad of Capriole, producer of fresh, ripened and aged
goat cheeses, is also a recognized Indiana Artisan.

There are Indiana Artisans all around the state of Indiana, and next spring, they all will come together in the first ever Indiana Artisan Marketplace.
Taking place at the Expo Hall at the Indiana State Fairgrounds on April 16 and 17, the event will showcase all Indiana Artisans, not just the food
producers, as well as an additional 75 artisans from Kentucky. This marketplace will be an opportunity for Hoosiers to discover the diversity of
products made locally.

This holiday season, when you are searching for the perfect gift, you may want to look close to home where you’ll be amazed at the variety of locally
made items available through the Indiana Artisan program.

Nice with either a cold glass of milk or a steaming hot cup of espresso. And equally delicious served in quarters with a glass of champagne!

The combinations of different flavor nut butters, marshmallows, and breads are endless!

2 slices raisin bread or your favorite soft bread
2 tablespoons peanut butter, almond butter or your favorite nut butter
One of your favorite flavors of 240 Sweet Marshmallows

Spread the nut butter evenly on both slices of bread.

Put the marshmallow in the center of one of the slices of bread on top of the nut butter.

Top the marshmallow bread slice with the other slice of bread (nut butter side down).

Grill in a Panini maker following the manufacturer's instructions until the bread is just golden and the marshmallow is slightly melted.

Cut in half or quarters and serve at once.

1/4 teaspoon Almond extract
2 cups Heavy Whipping Cream
Sweetened sliced fresh Peaches for garnish

Peel and pit peaches, whirl in blender or mash w/ masher. Mix peaches, Gourmet marshmallows, sugar, lemon juice and flavoring.
Cover and chill the peach/mallow mixture 2 to 3 hours, then beat w/ mixer for 3 minutes until marshmallows are partially broken up. Whip cream until stiff; fold cream into peach mixture. Pour into lovely shallow serving dish and chill for several hours or partially freeze. Serve garnished with sweetened sliced fresh peaches and sprigs of mint or fresh basil. Serves 6 to 8 persons.

On March 5, the Old Northside will be teeming with “foodies,” as they make their way to Food Con, an unconventional convention that features art exhibitions, poetry, films and lectures, hand-on activities, and, of course, food. In a joint project between the Harrison Center for the Arts and the Indiana Humanities Council’s Food for Thought program, Food Con will be a first-of-its-kind showcase and exploration of the art and culture of food in Indianapolis. “Food Con will be to foodies what GenCon is to gamers,” said Joanna Taft, director of the Harrison Center for the Arts. “If you’re interested in food—how it grows, how it makes you feel, what to do with it—then Food Con is the place for you.”

FoodCon will be held at the Harrison Center for the Arts from 6-10 p.m., during IDADA’s popular First Friday tour. In the gym, representatives from local farmer's markets, urban gardens, neighborhood supper clubs and more will be on hand to answer questions, share recipes and discuss their passion for food. Artists exhibiting that night include Bruce Campbell, Kyle Ragsdale, Carolyn Springer, Penelope Dullaghan, Ben Valentine, Leah Gauthier, Kristin Hess and more. Attendees can also explore the Harrison Center's 21 artist studios.

The Indiana Humanities Council, located across the street from the Harrison Center, will host a “pre-party” event from 5-6 p.m. This event is just one of many Food for Thought programs taking place across the state. A two-year program developed by the Indiana Humanities Council, Food for Thought will address issues of hunger, nutrition, food production, obesity, food security and safety.

Indiana is home to hundreds of talented artisans and boasts a variety of unique handmade products. - Lt. Governor Becky Skillman

INDIANAPOLIS, Indiana – Handmade marshmallows will be featured at the Indiana State Museum this October, as part of the Artist in Residence program. This program highlights unique and locally-crafted products. Each month one artist is chosen to exhibit their work, do demonstrations and teach visitors about the process in which artists create their uniquely different types of work. The demonstrations are held two days a month, usually on Saturdays.

Each chosen artist has been juried into Indiana Artisan, which has a strong partnership with the Indiana State Museum. Indiana Artisan is a joint venture of the Indiana Office of Tourism Development, the Indiana Office of Community and Rural Affairs, the Indiana Arts Commission and the Indiana State Department of Agriculture. Indiana Artisan was set up to support artisans and helps provide them with networking opportunities and entrepreneurial development, as well as raise awareness of Indiana’s diverse offerings of fine craftsmanship.

October’s Artist in Residence is Alexa Lemley, Executive Chef for Lemleys’ Catering and 240SWEET. Lemley grew up in the family catering business, becoming Executive Chef in 2001. She is known for her creativity in combining unique ingredients to create delicious flavors. The museum is featuring her 240SWEET Artisan Marshmallows in the Indiana Store. This morning, I received an email from an engaged couple. Vegetarians, they want to make sure that the food they serve reflects their values. Freshness and taste also play a big part in what they want to present to their families and guests.

While we are not vegetarians at Lemleyland, we do enjoy all types of food. We often cater events for people who do not eat meat. Last summer, we catered a wedding for vegans who now live in California. They enjoyed a bruschetta bar and pasta. Above, I've included some images of popular meat-free items: Vietnamese spring rolls, Asian broccoli spoons and spinach-feta stuffed mushrooms.

I could not find a picture of our barbecue tofu. Clients who order it usually are hosting a casual event with the majority of guests being carnivores. Without fail, almost all guests at these events try the barbecue tofu--and they like it. The secret? We make our own Copperhead barbecue sauce from all-natural ingredients. Whether hand-pulled pork or tofu, the sauce makes a difference.

At Lemleys' Catering and Max's Ole Hickory Pit BBQ, we care about pleasing our clients with diverse tastes.

Chateau de Pique wedding

Today, I met with a bride to be and her mother at Chateau de Pique. The family chose Lemleys' Catering to provide service for their upcoming celebration with 600 guests.

Located in Seymour, Chateau de Pique is a local winery. On their grounds, they have two event spaces: a renovated barn and a free-standing tent. They host many public and private events throughout the year. You can visit their website, http://www.chateaudepique.com/ to learn more about their services.

Lemleys' Catering is proud to be a preferred caterer at Chateau de Pique. It is one of my favorite spots for an outdoor reception. Perfect for food stations, the tent is elegant and beautiful. Unlike some other venues which hold larger groups, it is neither factory-industrial nor dark. Atop a slight hill, the tent provides a welcoming and romantic spot to celebrate a wedding.

Recently, we catered an event for the Columbus Indiana Philharmonic. For Tea and Thee, we created a fairy garden buffet. Yes, that is real cotton candy and real grass adorning the tables.

Joyce Lucke, owner of Paragon Meetings and Events, http://www.paragonme.org/, coordinated a wonderful affair for the young ladies and lads. There was singing, story-telling and parading around the room. We're looking forward to next year's event.

Over the weekend, we catered a dinner for Leadership Johnson County at Beeson Hall. Chef Alexa designed a feast of Australian foods. For this elegant meal, our kitchen staff created melt-in-your-mouth pavlovas and tasty crocodile puffs.

Today, I received the pictures from our recent event for the Franklin Chamber of Commerce. For their Cash Bash, we served 250 people at Beeson Hall. For this fun event, we created a delicious, affordable menu. We decorated the buffet with plenty of green--real grass and fake money. To incorporate the gaming aspect, we used poker chips and gambling accessories.

$500 minimum for service from this menu. Pricing includes up to a two hour service time. Cost does not include Indiana sales tax. This menu is valid only on Fridays. Tasteful Tips:

1. Quality is more important than quanity. It is better have five tasty items than 10 blah ones.

2. Relate your menu to your event. You will create a stronger impression with your guests if you "theme" your party.

3. Keep in mind the "ease of eating". Foods that are easy to eat are more enjoyable.

4. Watch for flow. Keep foods and beverages in different areas to avoid crowding.

5. Don't try to do it all yourself. If you're too busy with service, who is networking with your guest?

Today in Lemleyland, we booked a wedding reception at the Henry Breeding Farm for September. It has an upscale barbecue theme. I'm really looking forward to it. The Historic Breeding Farm is located outside of Columbus--not very far from the Outlet Mall. It has a warm, rustic feel that is complimented by wildflower centepieces and foods cooked outside.

Today, Chef Alexa and I visited Odon, Indiana. There, we'll be catering a wedding in May.The reception will be at the Simon G. Graber Community Building. The building is HUGE! Chef Alexa has some great ideas for interactive food stations.

Today, Chef Alexa and I met with a bride to be and her family to discuss her wedding reception. She will be having it her family's home. Mark from Ellis Tents and Events is helping them plan out where to place the tents.
In a smart move, the family is utilizing the services of Cathy Teeters for wedding coordination. Over the years, Lemleys' Catering has worked with Cathy many times. Happy Valentine's Day!
At Lemleys' Catering, we love this day set aside for romance and sweet foods. In fact, we are offering a free bottle of Moet champagne for couples who book their weddings with us on February 14.
Today, I attended the Greater Franklin Chamber of Commerce monthly luncheon. As a member of the Greater Franklin Chamber of Commerce, I volunteer on the PR Committee. We're catering the Cash Bash next Saturday at Beeson Hall. Tickets are available from the chamber office at http://www.franklincoc.com/ . We'll be serving steaks and bourbon chicken. Also, attendees will enjoy our chocolate fondue. This is a great way to support the chamber and taste our delicious foods

Today, I received an email from Columbus Youth Camp (CYC). I learned that they posted a link to Lemleys' Catering on their website! Above is a picture of the Reeves Center--a beautiful former home that now hosts events.

Last year, we catered meal service for the Institute for Self Actualization retreat weekend at the Noblitt Shelter. We served breakfasts, lunches and dinners for the group. For them, we cooked foods on site. They loved our cheese scrambled eggs and yogurt bar. We provided a country cookout for their last meal with foods prepared on grills. They have already booked for 2008.
CYC is great for anyone who wants to appreciate nature while having an event. Smaller events (business meetings and intimate weddings) are perfect in the Reeves building. For a larger wedding, a tent can be posted on the grounds. Also, medium events can utilize the Noblitt Shelter. I love this space. To really appreciate it, I think you have to see it.

Recently, several brides have wanted to know what we are serving in this picture on our Website, http://www.lemleyscatering.com/. These are strawberry and rose petal shop shots created by Chef Alexa for a wedding last summer. Chef Alexa blended rose (yes, this is really made from rose petals) martini mixer with cream and fresh strawberries. She topped them with organic rose petals. During the reception, we passed these and some other appetizers for the guests to enjoy.
We're glad to create soup shot to coordinate with any bride's choice of colors.

Limoncello Wedding Favors

While the snowstorm blusters outside, Chef Alexa is busy bottling some sunshine. Right now, she is scrapping the pith from 16 Meyer lemons to make limoncello. In a couple of weeks, we'll enjoy this Italian liqueur.

To create her limoncello, Chef Alexa combines the lemon peels, some sugar and a bottle of 100 proof vodka. A refreshing treat, it makes me remember the warmer times. I can almost feel sunshine and smell ocean breezes.

For summer weddings, limoncello makes a tasteful favor--especially if you make it yourself. You can put it in pretty little bottles and use ribbon to attach a tag. Easy and inexpensive, this makes a great, personal way to thank your friends and family for attending. No one will throw this away!

While organic lemons are healthier, we couldn't find any Meyers that were. I think that any type of lemon will work fine.
